Yogurt Bark

A great healthy snack for curbing that craving for sweets in a good way. Frozen yogurt bark is super easy to make and loved by kids and adults as well.

Ingredients

  • 2 cups plain greek yogurt (or vanilla greek yogurt - just by itself)
  • 3-4 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2 cups fresh fruit , cut into small pieces

Instructions

  • 1. Line a quarter baking sheet (9" x 13") with parchment paper. Pour the yogurt mixture into the sheetpan, and spread evenly.
    2. Sprinkle your favorite fruits, nuts, and/or chocolate pieces all over.
    3. Place sheet-pan into the freezer for at least 4 hours to 24 hrs.
    Brake into pieces, and enjoy!
    If you like this recipe, you can try out next time mixing a fruit puree into the greek yogurt, or add a few spoons of chocolate powder to make chocolate frozen yogurt bark.
    Topping Ideas:
    fresh mixed berries
    pomegranate kernels
    edible flower petals
    freeze dried fruit
    chocolate chips
    pistachio nuts, almonds
    peanut butter m&m, or smarties
    chocolate oreo cookie crumbs
    granola
    accai or pitaya freeze dried powder

Notes

Yogurt bark keeps well frozen for up to 2 weeks! I don't recommend it any longer, as it tends to get freezer burn. 
Store in airtight container.
