Preheat oven to 350 °F.1. Place the bacon strips on a baking tray lined with parchment paper. Brush the bacon with the maple syrup, sprinkle a little brown sugar (optional), and bake for 15 minutes, or until golden and crisp. Transfer to a wire rack to cool.2. Make the dressing: In a small bowl, whisk all ingredients for the dressing together. Serve this dressing immediately, or for best flavor chill for 2 hours before serving.3. Cut Iceberg lettuce into small wedges, and arrange on a platter, alternating with the bacon. Drizzle generously with dressing, and sprinkle crumbles of blue cheese. Serves 6-8.
