Cowboy Caviar (aka Texas Caviar is a savory appetizer dip featuring beans and fresh chopped veggies tossed in a spiced citrus vinaigrette. Scoop up with tortilla chips, or serve as salad or side dish with grilled meats.
This fresh salad makes a great side dish for picnics, potlucks, and parties.

Ingredients

Salad Ingredients:

  • 2 medium-sized tomatoes, seeds removed, diced
  • 1 green bell pepper, diced
  • cup red onion, finely diced
  • 1 serrano pepper, seeds removed, and finely diced
  • 15 oz black beans, rinsed and drained
  • 15 oz black-eyed peas, rinsed and drained
  • 11 oz corn, drained
  • 1 avocado, diced
  • ½ cup cilantro, finely chopped

Salad Dressing:

  • 2 oz olive oil
  • 1 ½ limes, juiced
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon ground cumin
  • 1 teaspoon ground garlic (optional)

Tortilla chips for serving

Instructions

  • For the Cowboy Caviar:
    1. Wash, de-seed, and chop your tomatoes, bell pepper, onion, and serrano pepper. Slice and cube the avocado, and chop the cilantro (if using)
    2. To a large bowl add black beans, black-eyed peas, corn, and all the chopped veggies.
    To make the Dressing:
    In a small bowl whisk together the oil, lime juice, sea salt, pepper, and ground cumin. If you like you can add 1 teaspoon of ground garlic as well.
    Pour the dressing all over the salad. Taste to see if seasoning needs to be adjusted. Serve with tortilla chips and a few drops of your favorite hot sauce. Enjoy!
