Summer Berry Salad with Kale and Medjool Date Vinaigrette

You will love this superfood summer salad. It is loaded with fresh juicy berries, topped with creamy goat cheese, and drizzled with the most delicious Date dressing!

Ingredients

For the Salad:

  • 3 cups mixed salad
  • 1 cup russian kale (purple kale)
  • ¼ cup purple cabbage, shredded
  • ½ cup cherries, pitted
  • ½ cup blueberries
  • ½ cup blackberries
  • ½ cup raspberries
  • ¼ cup creamy goat cheese, or substitute with feta
  • ¼ cup candied pecans (optional)

Salad Dressing:

  • 4 medjool dates , de-seeded
  • 2 tablespoon orange juice
  • 3 tbsp lemon juice
  • 1 teaspoon white balsamic vinegar
  • 1 teaspoon dijon mustard
  • ¼ cup olive oil
  • salt & pepper to taste
  • 2 tablespoon water for thinning the vinaigrette (optional)

Instructions

  • 1. On a large serving platter place mixed salad, chopped kale, and purple cabbage. Top with all the berries, crumble goat cheese, and add the pecans.
    2. Make the dressing: Add the medjool dates along with all the dressing ingredients into a blender cup, and pulse until smooth. If too thick, you can add a few spoons of water for thinining out the dressing.
    3. Drizzle the desired amount over the salad and toss. Enjoy!
