This healthy and vibrant roasted butternut squash mash makes an amazing alternative to classic mashed potatoes. A perfect side dish for the upcoming holidays!
1 teaspoonsalt- or more to taste (about 1 ½ teaspoons if sweet potato is added)
¼teaspoonpepper- or more to taste
½teaspoonground nutmeg
¼teaspoonground onion powder
¼teaspoonground garlic powder
½cupmilk
3teaspoonbutter
1sweet potato (yam)- optional
Grilled onion topping:
1yellow onion- sliced
1glove garlic-optional
cilantro for garnish-optional
Instructions
Preheat oven to 350 °F1. Cut butternut squasch lenghtwise through the middle. Drizzle a little olive oil and season with a little salt and pepper. Place cut-side down on a baking sheet and bake ca. 45 minutes, or until squash is soft. Remove from the oven. 2. If you would like to serve the mash with grilled onion: peel and slice 1 onion, and sautee in a skillet with a little butter (medium heat) until soft and fragrant. A little clove of garlic (minced) may be added, if you like.3. Scoop out the butternut squash and place into a medium siced pan. Puree with a potato masher until all is smooth. 4. Add all seasoning, milk and butter. Mix until all combined on medium heat. Adjust seasoning after taste. Top with grilled onion, a little butter, and a drizzle of fresh chopped cilantro, if desired.
