Make the Green Beans:1. Place green beans into a large skillet or pan and cover with water. Add a dash of salt and bring to a boil until the beans start to soften about 7 - 10 minutes. Drain the water. Add the beans to a quick ice bath to stop the beans from cooking. Also, this will allow the beans to keep their beautiful green color. 2. Add butter to the skillet on medium heat, then add finely minced garlic. Cook for 1 minute, then add the drained green beans into the skillet. Season with salt pepper, and nutmeg. Cook and stir until the beans are tender and fragrant about another 2-3 minutes. Serve.Make The Crispy fried Shallots:Add the thinly sliced shallots to a skillet. Drizzle olive oil. Fry on medium/high heat stirring constantly for about 5 minutes, then reduce the heat to low, and continue to cook for another 3 minutes. Once the shallots are golden brown, remove them and place them on a paper towel-lined plate to catch excess oil.Arrange buttered green beans on a plate, top with the crispy fried shallots. Enjoy!
