Cuban Salad

This vibrant and refreshing Cuban salad combines avocado, cucumbers, tomatoes, and red onion. Drizzled with a fresh and light dressing with hints of warm spices, garlic and lemon.

Ingredients

  • 1 large haas avocado
  • 2 mini cucumbers
  • 3 tomatoes of the vine
  • ¼ red onion - thinly sliced
  • micro greens for garnish - optional

Dressing:

  • 1 small clove garlic -finely minced, or grated
  • ¼ teaspoon ground cumin
  • 2 tablespoon honey
  • ¼ cup lime juice -freshly squeezed
  • cup olive oil
  • ¼ teaspoon salt
  • teaspoon pepper
  • a tiny pinch cayenne - optional

Instructions

  • Make the Dressing: Whisk together the lime juice, honey, garlic, cumin, salt and pepper. Slowly drizzle (while whisking) the olive oil in. Add a pinch of cayenne if you like a little bit of spice.
    Arrange the Salad: Wash and slize the vegetables, quarter the tomato. Add everithing on a Salad platter. Pour the dressing over the veggies and toss to combine. Garnish with micro greens. Enjoy!
