This vibrant and refreshing Cuban salad combines avocado, cucumbers, tomatoes, and red onion. Drizzled with a fresh and light dressing with hints of warm spices, garlic and lemon.
Make the Dressing: Whisk together the lime juice, honey, garlic, cumin, salt and pepper. Slowly drizzle (while whisking) the olive oil in. Add a pinch of cayenne if you like a little bit of spice.Arrange the Salad: Wash and slize the vegetables, quarter the tomato. Add everithing on a Salad platter. Pour the dressing over the veggies and toss to combine. Garnish with micro greens. Enjoy!
