Blueberry Cherry Crumble

Blueberry cherry crumble with toasted pecans, a hint of lemon and orange, topped with a a dollop of vanilla iccream. Enjoy hot or cold at any time of the day.

Ingredients

For the Blueberry Cherry Filling:

  • 2 ½ cups blueberries
  • 2 ½ cups cherries pitted (fresh or frozen)
  • 3 tablespoon sugar
  • 2 tablespoon lemon juice , freshly squeezed
  • 3 tablespoon all-purpose flour

For the crumble:

  • ½ cup butter - unsalted-sweet cream (1 stick)
  • ½ cup brown sugar
  • 1 cup all - purpose flour
  • ½ cup rolled oats
  • ½ cup pecan nuts chopped
  • finely grated peel of lemon & orange (just a little bit, so it doesn't overpower the rest)
  • 1 teaspoon ground cinnamon
  • teaspoon pinch of salt

Instructions

  • Preheat oven to 350 °F
    1. Mix the berries with the sugar, lemon juice, and flour. Pour into a baking dish.
    2. In a small bowl, add butter (at room temperature), but cold butter works too. Add brown sugar, flour, oats, nuts, cinnamon, a pinch of salt, and a little bit of finely grated lemon & orange peel. Knead the mixture until crumbles form. Then sprinkle generously over the berries.
    3. Bake for about 30 to 35 minutes.
    Serve with a big scoop of vanilla ice cream, or by itself, hot or cold!
