I have made this recipe many times to try to perfect it. I wanted it to taste earthy, but also soft, and not dense like you find in supermarkets, with subtle notes of fruits and honey. This recipe calls for molasses, and I think it adds a nice taste to the muffin. I also added honey to soften out the strong molasses flavor. After making this recipe with only 4 tablespoons of molasses, it was too strong for me, and after testing it again with only 4 tablespoons of honey, it was good but not wow.
