Banana Nut Waffles

A quick and easy Belgian Waffle recipe with a fruity twist. Mashed ripe bananas and crunchy walnuts are perfect in the mix. Serve with warm chocolate sauce, this waffle recipe is even more delicious.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon ground nutmeg (optional)
  • ½ teaspoon ground cinnamon (optional)
  • cup sugar
  • 1 tablespoon vanilla extract
  • ¼ tsp salt
  • 3 whole egg yolks
  • 1 ½ cups buttermilk
  • ½ cup butter , unsalted
  • 2 small bananas , mashed
  • ¼ cup walnuts , chopped (optional)
  • 3 whole egg whites

Instructions

  • Preheat Waffle iron to recommended setting. (I use the Classic Setting, medium brown)
    1. In a large bowl sift together flour, baking powder, salt, nutmeg, cinnamon (if using), and sugar.
    2. Melt the butter.
    3. Mash the bananas with a fork.
    4. In a large measuring cup, or medium bowl, whisk together the egg yolks with buttermilk, and vanilla extract.
    5. Pour the wet ingredients over the dry ingredients and gently stir until they are about halfway combined. Add the mashed banana. Then pour the melted butter and continue to stir gently.
    6. With a mixer, whisk the egg whites until they have stiffened and soft peaks form. Very gently fold them into the waffle batter. Do not over mix at this point.
    7. Spray waffle iron with a non stick baking spray.
    8. Scoop the waffle batter onto the iron. Cook according to its directions. Making sure the waffles are nice golden brown and criso. That can take about 4.5 to 5 minutes.
    Remove and serve right away hot out of the oven with some warm syrup, or warm chocolate sauce. I usually melt a little nutella, and drizzle it over the waffles. Garnish with chopped walnuts and extra slices of banana. Also delicious with Cinnamon whipped cream!

Notes

If you like some crunch in your waffle, you can also pour the chopped walnuts into the batter. 
If you don't have buttermilk at hand, you can use regular milk and add 1 teaspoon of white vinegar, or lemon juice. Let sit for 5 minutes to turn into buttermilk.
