AUTUMN SPICED GRANOLA

This crunchy granola is bursting with yummy fall spices. Hearty oats, crunchy nuts, dates, tart apple chips give this granola both texture and flavor.

Ingredients

  • 3 cups rolled oats (I use a mix of 1 cup old fashioned oats and 2 cups quick oats)
  • ½ cup chopped walnuts
  • ½ cup chopped pecans
  • 2 tablespoon flax seeds
  • ¼ cup hemp seeds (optional) - substitute with Pumpkin seeds, or leave out altogether.
  • ¼ cup lightly packed brown sugar
  • teaspoon salt
  • ¼ teaspoon ground nutmeg (alternatively use pumpkin spice)
  • 1 teaspoon ground cinnamon
  • ¼ cup coconut oil
  • ¾ cup maple syrup
  • 1 cup a mixture of chopped dates, apple chips, cranberries, raisins, or your favorite dried fruit! (optional)

Instructions

  • Preheat oven to 325 °F
    1. In a large bowl add oats, chopped nuts, seeds, and spices. In a small pan heat the coconut oil. Once the coconut oil has liquified add to the oat mixture, then pour the maple syrup in. Stir everything really well together. Line a baking sheet with parchment paper, pour the oat mixture evenly onto the sheet. Bake for about 35 minutes. After 15 minutes stir granola often to prevent burned edges. Granola should be golden brown. Allow to cool completely. Break into desired pieces. Some small and bigger clusters are nice. Store in a glass jar, or air-tight container. Enjoy!
