This asian cucumber salad is woderfully balance with a sweet and sour dressing that brings out the asian flavors perfectly.

This Asian Cucumber salad is made with wonderful Asian flavors like sesame, ginger, garlic, and soy. It pairs beautifully with other Asian entrees.

Ingredients

  • 3 cups Persian, or English Cucumbers - thinly sliced
  • ½ teaspoon salt
  • 2 tablespoon chives or scallions - finely chopped
  • a few slices of red chili for garnish

Asian Salad Dressing:

  • 1 teaspoon garlic , finely minced
  • 1 teaspoon ginger , finely minced
  • 1 teaspoon chili in garlic paste
  • ¼ cup rice wine vinegar
  • 1 tablespoon light soy sauce
  • 1 tablespoon sugar , or honey
  • 1 tablespoon toasted sesame oil
  • 1 tbsp sesame seeds

Instructions

  • 1. Finely slice the cucumbers. This works great with a mandoline. Sprinkle with salt to help to release water. Meanwhile, make the dressing.
    2. To a small bowl add the finely minced garlic, ginger, and chili paste. Then add the rice wine vinegar, soy sauce, sugar, and sesame oil. Whisk dressing well together, then add the sesame seeds.
    3. With a paper towel gently pat the cucumbers dry, or strain the water with a colander. Add them to a salad bowl. Pour the salad dressing over the cucumbers. Sprinkle the scallions, and mix the salad. Garnish salad with sliced red chile if you like. Refrigerate until ready to serve.

Notes

SUBSTITUTIONS:

You can make this Salad Gluten-free, you can use tamari, liquid aminos, or coconut aminos.
