This well-rounded salad makes a healthy side or main dish in fall or late summer. Packed with fresh greens, fruits, nuts, and creamy goat cheese. Delicious with a balsamic fig vinaigrette!
8-10figs- substitute with dried figs if fresh is not available
5slices of goat cheese- crumbled
2-3tablespoonwalnuts- chopped & lightly toasted
1recipe of fig balsamic vinaigrette- se notes
Instructions
1. Using a skillet, slightly toast the chopped walnuts, about 2 minutes. (medium heat)2. Arrange the arugula on a plate. Top with halved figs, nuts, and goat cheese. Drizzle salad with olive oil, and fig balsamic vinaigrette. Gently toss. Enjoy!
