I love to combine fresh seasonal fruit with a salad. It provides the perfect ballance of sweet and earthy, juicy and crunchy all at the same time. A perfect summer salad with the most vibrant and delicious strawberry vinaigrette that you will taste. The Strawberry vinaigrette is made with fresh strawberries, and it is brightened up with a squeeze of fresh lime juice, and a hint of white wine vinegar. Naturally sweet and tangy. You will love this strawberry salad - It is great for spring and summer, and is perfect for lunch or as a dinner side!
My strawberry salad dressing is really the star here, and complements all spring and summer leafy vegetables really well. For my salad, I used butter lettuce (Spinach leaves would also be a lovely addition), and asparagus. The asparagus I quick-blanched in boiling water for a few minutes. I added sourdough bread that I cut in cubes and toasted in the oven with a drizzle of olive oil, and topped it with goat cheese crumbles.
Other additions that would be great with the strawberry dressing are, fresh cantaloupe, prociutto, feta cheese crumbles, and candied nuts.
When it comes to salad dressing, homemade versus store-bought there is no comparison. You are in control how much sweetener and oils go into it. No preservatives, and no artificiall food coloring. Nature gives it to us all. This strawberry vinaigrette comes together in 3 minutes, and makes ALL the difference!

Strawberry Vinaigrette
Ingredients
- 1 cup fresh strawberries
- 1 tablespoon honey
- Β½ lime, juiced
- 1 tablespoon white balsamic vinegar
- β teaspoon salt
- dash pepper
- 1 tablespoon olive oil
Instructions
- 1. Cut Strawberries into small pieces, then smush with a fork. Add the honey, and allow to macerate. I don't recommend blending, because the dressing will not come out the same. It will be too emulsified and will not have the same rich color! 2. Add all other ingredients, and whisk to combine. Enjoy!
