Summer Berry Salad with Kale and Medjool Date Vinaigrette
Ingredients
For the Salad:
- 3 cups mixed salad
- 1 cup russian kale (purple kale)
- ΒΌ cup purple cabbage, shredded
- Β½ cup cherries, pitted
- Β½ cup blueberries
- Β½ cup blackberries
- Β½ cup raspberries
- ΒΌ cup creamy goat cheese, or substitute with feta
- ΒΌ cup candied pecans (optional)
Salad Dressing:
- 4 medjool dates , de-seeded
- 2 tablespoon orange juice
- 3 tbsp lemon juice
- 1 teaspoon white balsamic vinegar
- 1 teaspoon dijon mustard
- ΒΌ cup olive oil
- salt & pepper to taste
- 2 tablespoon water for thinning the vinaigrette (optional)
Instructions
- 1. On a large serving platter place mixed salad, chopped kale, and purple cabbage. Top with all the berries, crumble goat cheese, and add the pecans.2. Make the dressing: Add the medjool dates along with all the dressing ingredients into a blender cup, and pulse until smooth. If too thick, you can add a few spoons of water for thinining out the dressing.3. Drizzle the desired amount over the salad and toss. Enjoy!
