This quick and easy Strawberry Streusel Tart comes together with just one dough. The Strawberries are juicy and jammy, and the streusel adds a little extra crunch. This tart is extremely delicious, and perfect for a quick spring/summer dessert!
Difference between a Tart and a Pie
Tarts and pies are somewhat similar. While a tart dough is sweet and buttery with a shortbread kinda feel. The crust is a little thicker than a pie crust. The goal for a tart is a firm, crumbly crust. Pie dough on the other hand, while also buttery but not too sweet, tends to have more of a crisp, flaky texture. Also, Pies are served straight from the dish in which they were baked, versus a tart is baked in a tart pan with a removable bottom so it can be unmolded before serving.

Strawberry Streusel Tart
Ingredients
- 1 cup butter - unsalted, and soft (bring to room temperature for a few hours)
- ΒΎ cup sugar
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- pinch salt
- 900 g strawberries
- ΒΌ cup sugar
- lemon juice - from half of a lemon
- 1 teaspoon vanilla extract, or seeds of 1 vanilla bean - optional
Instructions
- Preheat Oven to 350 Β°F (180 Β°F)I'm using a 12 inch (23 cm) Tart pan with removable bottom. The Tart pan does not need to be greased!1. Wash and half the strawberries. Add to a bowl, then add ΒΌ cup sugar and the juice of half a lemon. You can add vanilla extract or vanilla bean to it, and combine.2. With a hand or stand mixer, cream the butter, sugar, and vanilla until light pale, and fluffy. About 2 to 3 minutes. Add the flour and a pinch of salt, and continue to mix the dough until crumbly.3. Take ΒΎ of the dough and press into the tart pan. Use the back of the spoon to press down and also press the dough up the sides. Refrigerate for 10 minutes.4. Fill the tart with the strawberries and their juice. Crumble the rest of the streusel crumbs all over the tart.5. Bake for 40 minutes, until crumbs are golden brown.6. Allow Tart to cool. Dust with a little powdered sugar (optional). Enjoy with whipped cream, vanilla ice cream, or just by itself.
