A delicious and refreshing summer fruit salad with a spicy kick that keeps you coming back for more!
This fruit bowl was inspired by a recent trip to the beaches of Sayulita, Mexico, where the waiters serve you these delicious pineapple boats directly on the beach.
What is Tajin? Tajin ( also called "salsa en polvo" in Spanish) is a seasoning powder consisting of primarely chili peppers, dehydrated lime juice, and salt. The taste is tangy with a slight spice. It is used to enhance the flavor, or add "zing" of fruits and vegetables.
Perfect for a summer treat, it goes well over juicy slices of watermelon, cantaloupe, mangos, coconut, crunchy bites of cucumbers and jicama. It comes together in just a few minutes. Just cut Pineapple vertically, hollow out fruit and cut into cubes. Cut the fruit of your liking into bite- sized cubes and assemble into pineapple boat. Then add a little salt, squeeze the juice from 2 limes and sprinkle the Tajin seasoning on top.

Pineapple fruit boat with Tajin
Ingredients
- ½ cup watermelon - cubed
- ½ cup cantaloupe - cubed
- ½ cup mango - cubed
- ½ cup pineapple - cubed
- ½ cup cucumber - cut into thin long sticks
- ½ cup jicama - cut into thin long sticks
- 2 Limes juiced
- sprinkle salt
- dash of Tajin
Instructions
For one half Pineapple:
- 1.) Cut Pineapple vertically. With a pairing knife carefully cut along the sides of the fruit, and hollow out with a spoon.2.) Cut all fruit into bite- sized pieces and assemble into holowed out pineapple boat. Sprinkle a little salt, squeeze the juice of 2 limes, then sprinkle the Tajin seasoning over the top. Enjoy!
