This classic Italian Peach Bellini is a super easy, super fruity and refreshing cocktail. Made with fresh peach puree, peach liquor and topped with Prosecco. Perfect for kicking off a weekend brunch or social gathering!
This frozen Peach Bellini comes together in no time! All it takes is peeling and slicing fresh peaches. Pop them into the freezer for at least 1 hour. Then add the semi frozen peaches into a blender with the peach schnapps. If the peaches are not that sweet, however, you may add a tablespoon of sugar. Puree the mixture. Add the fruit puree first into a pitcher, add the Prosecco. Stir. Alternatively, you can add about 2 tablespoons of peach puree into champagne flutes, next add Prosecco and stir. Have no Prosecco on hand? Any sparkling wine (I love Asti Spumante), is equally delicious.

Ingredients
- 3 cups Yellow Peaches (3 peaches) - slightly frozen
- ¼ cup Peach Schnapps - (optional)
- 1 Bottle Prosecco - or any sparkling wine
Instructions
- 1. Prepare peaches: Wash & peel peaches. Cut into chunks. Place into ziplock bag and freeze for at least 1 hour.2. Add frozen peaches into a blender. Pour in peach schnapps. Puree. Mixture should resemble a slushy.3. Add peach puree into a large pitcher and top with Prosecco. Alternatively, add about 2 tablespoons of peach puree into champagne flutes, top with sparkling wine.
