With Thanksgiving right around the corner, it seems like mashed potatoes and potato gratin are the only way to go. While it may be tradition to make these classic recipes, these oven-roasted potatoes are equally delicious. Honestly, it is tempting to devour these roasted potatoes straight from the pan.
These roasted potatoes are super simple to make with only a few ingredients. Just season with sea salt and freshly ground pepper. Toss them in olive oil, and sprinkle garlic and fresh herbs. Bake for about 20 minutes at 350 degrees Fahrenheit (180 ΒΊC).
Whether you make them for a holiday meal or for dinner during the week, you surely will love them too.
HOW TO ROAST POTATOES
Roasted Potatoes make an ideal side dish for meat entrees. I prefer using a blend of red, blue, and yellow baby creamer potatoes, though fingerling and small Yukon gold potatoes also work wonderfully.
To ensure even cooking, you want to cut them all the same way. Cutting the larger potatoes into quarters, and the smaller ones in half.
Spread the potatoes evenly on a baking sheet and coat them with a drizzle of olive oil, salt, pepper, and garlic powder. Sprinkle with fresh herbs like rosemary and thyme. Roast in a preheated oven at 350 ΒΊF (180 ΒΊC) until they are tender and golden brown. Initially, place the potato halves face down and remember to flip them halfway through the roasting time for even cooking. Ensure the potatoes have enough space on the baking sheet to roast perfectly.
Tip: Try to leave a little space in between each one. If they are too crowded or on top of each other, they will steam in the oven instead of becoming crispy with that beautiful golden brown color.
Season with more salt if needed, garnish with fresh chopped parsley, and enjoy!

Oven Roasted Potatoes
Ingredients
- 2 lbs small new potatoes, cut in half, or quarters
- season with sea salt and freshly ground pepper, about Β½ teaspoon salt, and quarter teaspoon pepper
- 1 teaspoon garlic powder
- 3 to 4 tablespoon olive oil
- fresh herbs such as rosemary, and thyme
- 1 tablespoon fresh chopped parsley for garnish (optional)
Instructions
- Preheat oven to 350 Β°F (180 Β°C)1. On a baking sheet toss the potatoes with olive oil, salt, pepper, and garlic powder. Spread evenly with leaving a little space in between each one. I usually put the face down first and halfway through the roasting cycle I flip them over to the other side. Add fresh herb twigs such as rosemary, and thyme. 2. Roast 20 to 30 minutes, or until tender and golden brown. The roast time will depend on the size of your potatoes.3. Remove sheet pan from the oven. Scoop potatoes into a serving dish and garnish with a little chopped fresh parsley. Enjoy!
