HOW TO MAKE GERMAN GINGERBREAD SPICE
Similar to the spices common in the U. S., like pumpkin pie spice, or apple pie spice. My authentic German Gingerbread spice is a very aromatic mix of ginger, cinnamon, allspice, nutmeg, clove, coriander, mace, and cardamom. You can use pre-ground, or whole spices and grind them yourself in a coffee/spice grinder, or a pestle and mortar like I did. Store in a glass jar with a tight fitting lid in a cool, dark place. Spice will keep for 1 year.
