Perfectly cooked German-style green beans that are flavorful, crisp, and tender. Quick browned in delicious garlic butter and served with crispy fried shallots. German-Style Green Beans are another popular side dish besides the well known GERMAN BRAISED RED CABBAGE (ROTKRAUT) typically with a German twist.
In Germany, you will find this green bean recipe served as "geschwenkte bohnen" or "speckbohnen" often served with bacon or a cured ham known as speck. As a recipe variation, just add chopped bacon to the onions while they are cooking. Then mix in with the sauteed beans at the end.
SELECTING GREEN BEANS
Snap, string, or green beans are all names for bush beans that you will find all year round at markets. They come in green, yellow, and gorgeous purple hues. There is also a French variety of green beans which are much thinner than the regular ones. I love those as well because they don't have the string in them. These are a little harder to find, but if you do use the Frech beans you will need to reduce the cooking time by half. Buy fresh green beans for this recipe (not frozen or canned) Be sure to rinse the beans and remove the stem end before cooking. Just cut the ends or snap off by hand.
HOW TO COOK GREEN BEANS
Step One: Place the green beans into a large skillet or pan and cover with water. Add a pinch of salt, and bring to a boil until the beans start to soften about 5 - 7 minutes. Transfer the beans to a quick ice bath to stop the beans from cooking. Also, this will allow the beans to keep their beautiful green color. Once cooled, drain and set aside.
Step 2: Add butter to the skillet on medium heat, then add finely minced garlic. Cook for 1 minute, then add the drained green beans into the skillet. Season with salt pepper, and nutmeg. Cook and stir until the beans are tender and fragrant about another 2-3 minutes. Serve.
SERVE WITH CRISPY FRIED SHALLOTS
This is how I make them:
Add the thinly sliced shallots to a skillet. Drizzle olive oil. Fry on medium/high heat stirring constantly for about 5 minutes, then reduce the heat to low, and continue to cook for another 3 minutes. Once the shallots are golden brown, remove them and place them on a paper towel-lined plate to catch excess oil.
Arrange buttered green beans on a plate, top with the crispy fried shallots. Enjoy!

Ingredients
Green Beans:
- 16 oz green beans
- 3 tablespoon unsalted butter
- 2 small garlic cloves
- Β½ teaspoon sea salt
- ΒΌ teaspoon pepper
- Β½ teaspoon nutmeg
Crispy fried shallots:
- 2-3 shallots, cut into thin rings
- 2 tablespoon olive oil
