Ingredients
Salad Ingredients:
- 2 medium-sized tomatoes, seeds removed, diced
- 1 green bell pepper, diced
- β cup red onion, finely diced
- 1 serrano pepper, seeds removed, and finely diced
- 15 oz black beans, rinsed and drained
- 15 oz black-eyed peas, rinsed and drained
- 11 oz corn, drained
- 1 avocado, diced
- Β½ cup cilantro, finely chopped
Salad Dressing:
- 2 oz olive oil
- 1 Β½ limes, juiced
- 1 teaspoon salt
- Β½ teaspoon pepper
- Β½ teaspoon ground cumin
- 1 teaspoon ground garlic (optional)
Tortilla chips for serving
Instructions
- For the Cowboy Caviar:1. Wash, de-seed, and chop your tomatoes, bell pepper, onion, and serrano pepper. Slice and cube the avocado, and chop the cilantro (if using)2. To a large bowl add black beans, black-eyed peas, corn, and all the chopped veggies.To make the Dressing:In a small bowl whisk together the oil, lime juice, sea salt, pepper, and ground cumin. If you like you can add 1 teaspoon of ground garlic as well. Pour the dressing all over the salad. Taste to see if seasoning needs to be adjusted. Serve with tortilla chips and a few drops of your favorite hot sauce. Enjoy!
