This sweet and juicy galette is the easiest pastry you will ever make. It is so versatile, you can use any fruit and can make it with puff pastry or regular pie dough. Perfect for an impromptu treat. Delicious served warm with a big scoop of vanilla ice cream. The ultimate summer dessert!
What is a Galette?
A Galette is a French pastry that is similar to a tart or pie. Basically, it is a buttery pastry dough wrapped around fresh seasonal fruit tossed with a little sugar, or honey. Open faced and rustic in design. It's simple unpolished look is what makes this dessert so effortless and charming.
A Galette can be made rectangular, square or circular, and varies in size or depth (although a galette is typically flat). The beauty of it is a free-form dessert that is baked on a baking sheet with pretty flaky edges, and can be made either sweet or savory. Both delicious!
To keep things simple, I used pre-made puff pastry for this recipe which makes it perfect for a quick dessert. Of course you can make it with your favorite pie dough.
A little tip: If you are using very ripe or juicy fruit, you can prevent a soggy crust by dusting the dough with a little flour before adding the filling.

BLUEBERRY GALETTE
Ingredients
- 4 cups (ca. 600 g) blueberries
- β cups (70 g) sugar
- 2 tablespoon (14 g) corn starch
- 2 tablespoon lemon juice (optional lemon zest)
- 1 tablespoon butter cold - unsalted
- 1 egg for egg wash
- 1 package (2 sheets) Puff Pastry pre-made, thawed & kept cold in refrigerator
Instructions
- Preheat oven to 375 F1.) In a bowl combine sugar, corn starch, lemon juice & zest with the blueberries. Set aside.2.) Prepare a baking sheet with parchment paper, and roll out puff pastry sheets. With a fork prick the dough all over.3.) Pour the fruit filling into center of pastry sheet. Gently fold pastry edges over the fruit, about 1 inch.4.) Whisk the egg with 1 tbsp. water, and brush all around the edges of pastry dough. That will give the pastry it's brown crisp color. Sprinkle with turbinado sugar (optional)5.) Add pea-sized dots of butter over fruit filling.Bake on center rack ca. 20-25 minutes.* Serve warm with a big scoop of vanilla ice cream. It won't disappoint π
