These wholesome, yummy bran muffins are made with whole grains, molasses and apples. They are the perfect on-the-go breakfast or snack.
I have made this recipe many times to try to perfect it. I wanted it to taste earthy, but also soft, and not dense like you find in supermarkets, with subtle notes of fruits and honey. This recipe calls for molasses, and I think it adds a nice taste to the muffin. I also added honey to soften out the strong molasses flavor. After making this recipe with only 4 tablespoons of molasses, it was too strong for me, and after testing it again with only 4 tablespoons of honey, it was good but not wow. So, by mixing the two together, I think a perfect balance has been achieved. I would love for you to try, and let me know your thought on this. xo, Diana
I bake these muffins usually in the evening and let them rest over night to develop all the flavors. Have on for a quick breakfast just like that, or with a little butter and honey!

BEST BRAN MUFFINS
Ingredients
- 2 eggs
- ½ cup brown sugar
- 2 tablespoon molasses
- 2 tablespoon honey
- ½ cup sunflower oil
- ½ cup applesauce - or 1 apple grated
- ¾ cup buttermilk - or ¾ cup milk + 1 tablespoon white vinegar
- 1 tablespoon apple cider vinegar
- 1 ½ cups whole wheat flour - all-purpose flour
- 1 cup wheat bran
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 teaspoon cinnamon
- 1 cup raisins
Instructions
- Preheat oven to 375 °FLine a standard size muffin tin with 12 liners, or a jumbo sized muffin tin with 6 liners.1. In a large bowl cream eggs with sugar, molasses, and honey. Add the sunflower oil, and whisk, then add the applesauce (or grated apple), apple cider vinegar, and buttermilk. Whisk until well combined and creamy.2. Add wheat bran, flour, baking powder, baking soda, salt and cinamon. Mix with a spatula until well combined. Lastly, stir in the raisins. Give it a quick stir, then divide batter evenly into muffin liners. Sprinkle with a little extra wheat bran (optional) Bake for about 17 to 20 minutes, or until a toothpick inserted into the center of the muffin comes out clean. Allow muffins to cool for 5 minutes, then transfer to wire rack. Enjoy muffins warm or cold!
