Sweet figs, crunchy nuts, and the creamy- salty goat cheese complement the peppery notes of the arugula very well. Serve with a drizzle of olive oil, a dash of salt, and toss in a balsamic fig vinaigrette. I like using balsamic vinegar in this recipe because it's not too acidic and has its own subtle sweetness.

ARUGULA-FIG SALAD WITH GOAT CHEESE

Ingredients
- 5 cups arugula
- drizzle of olive oil
- 8-10 figs - substitute with dried figs if fresh is not available
- 5 slices of goat cheese - crumbled
- 2-3 tablespoon walnuts - chopped & lightly toasted
- 1 recipe of fig balsamic vinaigrette - se notes
Instructions
- 1. Using a skillet, slightly toast the chopped walnuts, about 2 minutes. (medium heat)2. Arrange the arugula on a plate. Top with halved figs, nuts, and goat cheese. Drizzle salad with olive oil, and fig balsamic vinaigrette. Gently toss. Enjoy!
