Aguachile is a Mexican dish, similar to Ceviche. Shrimps are cooked in a delicious cilantro-chili lime base. Accompanied by fresh slices of cucumbers, red onion, and avocado. This Aguachile recipe will surely light up your tastebuds. Serve on a Tostada, or tortilla chips.

HOW TO MAKE AGUACHILE
1. Peel, and devein shrimp. Wash and pat dry. Then slice shrimp in half (lengthwise). Place in a shallow dish, and season with salt and pepper. Squeeze the juice of 2 big limes or lemons over the shrimp. This will cook the shrimp, turning them slightly pink in color. Marinade in refrigerator for at least 30 minutes.
2. Make the Dressing: Add the cilantro, jalapenos, salt, and lime juice into a high-speed blender, and blend until smooth.
3. Pour the dressing over the marinaded shrimp, and toss to combine. Refrigerate for another 30 minutes, or more if you are preparing this dish for later.
4. Right before serving, give it a quick stir, and check if more salt is needed! Then top with freshly sliced cucumbers, red onions, avocado, and thin slices of serrano pepper.
Serve on a Tostada with extra hot sauce if desired, or with tortilla chips. Enjoy!
WHAT IS THE DIFFERENCE BETWEEN CEVICHE AND AGUACHILE?
Authentic Mexican Aguachile is made with shrimp that is cut in half, instead of chopped, then submerged in a dressing made out of cilantro, jalapenos, lime juice, and salt. That dressing is usually blended and becomes the base for the Aguachile. Raw vegetables are added as a topping, whereas ceviche all vegetables are finely diced, and made into a shrimp salad.
