This Chicken Lo Mein is better and healthier than take-out, hands down! Lo Mein is a Chinese dish with egg noodles. It has lots of fresh vegetables that are stir-fried, flavorful chicken that is coated in a savory sauce made from soy sauce and other seasonings.

I love this little dish. It comes together super quick, literally under 20 minutes. All you need is a pan or wok and you can easily feed a family of four. My recipe is also a healthier take-on to the traditional chow mein or other lo mein variations. The noodles are not fried and there is less oil used in the cooking. The sauce is not heavy, lesser in sodium and sugar also.
TIPS FOR MAKING LO MEIN NOODLES
- Have all your vegetables cut and ready to go.
- Make sure the sauce is ready before you cook the noodles because you will want to immediately add the noodles to the sauce while it's still very hot.
- For the noodles, I used Lo Mein egg noodles. If Lo Mein noodles are not available, you may substitude with Spagetti noodles.
- Feel free to season with a little more soy sauce or some chili garlic sauce if you like spice.
VEGETABLES FOR LO MEIN
I used Green Cabbage, Mushrooms, Red Bell Pepper, carrot, and green onions in my recipe. Feel free to substitute with your favorite vegetables. Adding Bean sprouts would also be wonderful. The onion can be left out, although it gives this dish extra flavor. Shred, or cut your vegetables as thin as possible so they can cook through, leaving some structure in the few minutes of cooking time.

Chicken Lo Mein
Ingredients
- 1 large chicken breast, cut into small pieces
- 2 tablespoon toasted sesame oil
- 6 oz lo mein noodles
- Β½ onion, thinly sliced
- 3 cups green cabbage, finely shredded
- 1 small red pepper, cut into thin strips
- 2 cups mushrooms, sliced
- 1 carrot, julienned
- 1 bunch green onions (green parts only, cut into 2-inch pieces)
Sauce
- 4 tablespoon low sodium soy sauce
- 1 Β½ tablespoon worcestershire sauce (or substitute with 3 tablespoons oyster sauce instead)
- 3 tablespoon Mirin, Chinese cooking wine
- 2 teaspoon sugar
- ΒΌ teaspoon pepper
- ΒΌ teaspoon chinese 5 spice powder
- 1 teaspoon toasted sesame oil
- 1 tablespoon cornstarch
- Β½ cup pasta water
Instructions
- Make the Sauce:In a small bowl mix together the soy sauce, worcestershire or oyster sauce, mirin, sesame oil, sugar, pepper, Chinese 5 spice, and cornstarch. Cut chicken breast into small bite-sized pieces. Add 3 tablespoons of sauce to the chicken, and set aside for 10 minutes.Cook Lo Mein Noodles after package instructionsCooking Directions:Heat sesame oil in a large skillet, or wok over high heat. Add the onions and cook for 1 minute, then the garlic, and cook for a few seconds. Add the chicken and stir fry for 2 minutes. Move the chicken to the side, add the cabbage and stir fry for 1 minute. Next, add the bell pepper and the mushrooms. Keep stirring and cooking for another 2 minutes. Add the sauce, pasta water, and noodles. Toss to coat, add green onions and stir fry for 1 minute. Remove from heat. Serve immediately. Enjoy!
