This crunchy Asian Cucumber salad is made with wonderful Asian flavors like sesame, ginger, garlic, and soy. It pairs beautifully with other Asian entrees or a quick lunch bowl. Try this with your Ahi Tuna bowl! This salad is healthy, fresh, and super delicious. Naturally Vegan and Gluten-free!
This easy-to-make Asian cucumber salad is one of my favorite go-to side dishes that pair beautifully with other Asian- inspired entrees. My family loves it, and I think you will fall in love with it too.
WHAT YOU WILL NEED TO MAKE ASIAN CUCUMBER SALAD
- Any cucumbers with thin skin (Persian, Japanese, or English Cucumbers)
- Salt, Sugar
- Chives or scallions
- Garlic
- Ginger
- Chili in garic paste
- rice wine vinegar
- soy sauce (tamari, or liquid aminos)
- toasted sesame oil
- Sesame seeds
You can make this Salad Gluten-free by using tamari, liquid aminos, or coconut aminos.
- Finely slice the cucumbers. This works great with a mandoline. Sprinkle with salt to help to release water.
- Meanwhile, make the dressing: In a small bowl add the finely minced garlic, ginger, and chili paste. Then add the rice wine vinegar, soy sauce, sugar, and sesame oil. Whisk dressing well together, then add the sesame seeds.
- With a paper towel gently pat the cucumbers dry, or strain the water with a colander. Add them to a salad bowl.
- Pour the salad dressing over the cucumbers. Sprinkle the scallions, and mix the salad. Garnish salad with sliced red chile if you like. Refrigerate until ready to serve.
SERVING SUGGESTION
Serve this crunchy and refreshing Asian Cucumber Salad alongside some steamed rice, my Asian- Baked Honey Soy Chicken, or in chicken wraps for an appetizer. Whichever way you serve it, I can promise this salad will become a staple in your house too!

Asian Cucumber Salad
Ingredients
- 3 cups Persian, or English Cucumbers - thinly sliced
- Β½ teaspoon salt
- 2 tablespoon chives or scallions - finely chopped
- a few slices of red chili for garnish
Asian Salad Dressing:
- 1 teaspoon garlic , finely minced
- 1 teaspoon ginger , finely minced
- 1 teaspoon chili in garlic paste
- ΒΌ cup rice wine vinegar
- 1 tablespoon light soy sauce
- 1 tablespoon sugar , or honey
- 1 tablespoon toasted sesame oil
- 1 tbsp sesame seeds
