GERMAN LEBKUCHEN (Nürnberger Elisenlebkuchen)

Germany's beloved traditional Christmas cookie. These traditional Nürnberger Elisenlebkuchen have a soft and chewy interior, filled with nuts, dried fruits and gingerbread spices. They are glazed with a delicious chocolate or sugar icing. This recipe is also gluten-free!!

Ingredients
- 5 eggs
- 1 ¼ brown sugar
- 2 tablespoon honey
- 1 teaspoon cinnamon
- 4 tablespoon Lebkuchen gewürzt Gingerbread spice. Click here for the perfect homemade spice mix.
- 8-10 oz mix of candied orange and lemon peel
- 2 ¼ cups almond meal
- 2 ¼ cups hazelnut meal
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- Backoblaten, either 70mm or 90 mm (Available on Amazon) See note below!
For the chocolate glaze:
- 3 -4 oz good quality dark or milk chocolate
- 1 teaspoon coconut oil
For the sugar glaze:
- 1 cup sifted powdered sugar
- 3 tablespoon water
Instructions
- Preheat oven to 300 °F (150 °C)1. With a food processer pulse candied orange and lemon peel. Add ¼ of the almond meal to prevent the pees from sticking too much.2. In a large mixing bowl, beat the eggs until foamy. Add the sugar, honey, cinamon and gingerbread spice, and beat until combined.3. Add the ground almonds, hazelnuts, baking powder, salt, and candied orange and lemon peels. Mix until everything is combined. The mixture will be somewhat sticky.4. Scoop the batter onto the Backoblaten, flattening out the top and spread close to the edges. Set them on a lined cookie sheet.Bake on the middle rack for 28-30 minutes. Allow to cool completely.Once cooled, place a wire rack over a coockie sheet. Melt chocolate with coconut oil in the microwave (about 1 to 1 ½ minutes) Dip desired amount of cookies into the melted chocolate. Set onto the wire rack to catch the drippings. Decorate cookies with aditional blanched almond halves, or finely chopped candied fruit. For the sugar glaze combine the powdered sugar with water. Stir until smooth. Dip desired amount of cookies into the sugar glaze. Set to the wire rack to cool until all Lebkuchen are dried completely. Keep stored in an airtight container. Cookies will keep for 2 weeks. The flavor improves with time. Enjoy!
