Cuban Salad
Ingredients
- 1 large haas avocado
- 2 mini cucumbers
- 3 tomatoes of the vine
- ΒΌ red onion - thinly sliced
- micro greens for garnish - optional
Dressing:
- 1 small clove garlic -finely minced, or grated
- ΒΌ teaspoon ground cumin
- 2 tablespoon honey
- ΒΌ cup lime juice -freshly squeezed
- β cup olive oil
- ΒΌ teaspoon salt
- β teaspoon pepper
- a tiny pinch cayenne - optional
Instructions
- Make the Dressing: Whisk together the lime juice, honey, garlic, cumin, salt and pepper. Slowly drizzle (while whisking) the olive oil in. Add a pinch of cayenne if you like a little bit of spice.Arrange the Salad: Wash and slize the vegetables, quarter the tomato. Add everithing on a Salad platter. Pour the dressing over the veggies and toss to combine. Garnish with micro greens. Enjoy!
