WHAT TO DO WITH LEFTOVER FRUIT AND YOGURT
Try this healthy snack for your family. It is a great way of getting your protein in, as well as calcium, fiber and vitamins. You can use any flavored greek yogurt, or you can sweeten plain yogurt at home with any flavor you prefer! It's much lower in sugar than store - bought flavors.
HOW TO MAKE FROZEN YOGURT BARK
Greek Yogurt; I like Vanilla, Strawberry, or you can even add a few spoons of chocolate powder to the yogurt to make chocolate frozen bark. Just stir in fresh or frozen fruit, and a few drops of vanilla extract, a sprinkle of ground cinnamon, maple syrup or honey to sweeten.
Layer a 9" x 13" baking sheet with parchment paper.
Spread yogurt evenly onto baking sheet.
Sprinkle your favorite toppings
Freeze for at least 4 hours or overnight. Break bark into pieces and store in a airtight container in the freezer for up to 2 weeks. I wouldn't recommend storing it for longer because it tends to get freezer burn if left any longer.
TOPPING IDEAS:
fresh mixed berries, pomegranate kernels, edible flower petals, freeze dried fruit, chocolate chips, pistachio, almonds, peanut butter, m&m, or smarties, chocolate oreo cookie crumbs, granola
WHAT TYPE OF YOGURT IS BEST TO MAKE FROZEN YOGURT BARK
I personally prefer Greek yogurt, which has a much thicker consistency, and is richer in flavor than regular yogurt. It also contains more protein, and has less sugar.
