This salad is crisp and refreshing. It would be great to have for a simple lunch, or to serve as a side with a nice dinner. Cold crunchy wedges of iceberg lettuce are topped with a homemade creamy buttermilk ranch dressing, and big chunks of a good quality blue cheese. And, of course, bacon makes everything better π
To cook the bacon the quickest , and easiest way, I like to place the bacon strips on a with foil lined baking sheet. Then generously brush the bacon with maple syrup, you can sprinkle a little bit of brown sugar over it, and pop it into the oven for about 15 minutes, flipping half ways through. You want to keep an eye on it though. Both, bacon and sugar can burn in a blink if you're not paying attention. Baking time can vary based on your oven's temperature accuracy, and the thickness of the bacon.
Once it is done, remove from the oven and transfer to a parchment or wax paper lined sheet while the sugars are still hot and syrupy. That will ensure the bacon sticking to the rack. Thats it, you will have gorgeous mahogany colored bacon, all sweet, smokey and crispy. Delicious!
I also like making my salad dressings from scratch. It is much healthier, as it contains no additives, and preservatives. It is quick and easy to make, and it tastes absolutely delicious. Wedge salad with maple-glazed bacon & blue cheese ranch dressing
Ingredients
- 1 head iceberg lettuce, cut into wedges
- ΒΌ cup creamy soft blue cheese, crumbled
- 8 slices bacon
- ΒΌ cup maple syrup
- 1 tablespoon brown sugar (optional)
Buttermilk Ranch Dressing
- Β½ cup sour cream
- Β½ cup buttermilk
- ΒΌ cup mayonaise
- Β½ teaspoon worcestershire sauce
- 2 teaspoon white vinegar, or lemon juice
- ΒΌ teaspoon sea salt
- β tsp pepper
- 1 teaspoon garlic powder
- Β½ teaspoon onion powder
- 1 Β½ teaspoon dill fresh or dried
- 3 tablespoon chives fresh or dried
- 1 tablespoon parsley fresh or dried
Instructions
- Preheat oven to 350 Β°F.1. Place the bacon strips on a baking tray lined with parchment paper. Brush the bacon with the maple syrup, sprinkle a little brown sugar (optional), and bake for 15 minutes, or until golden and crisp. Transfer to a wire rack to cool.2. Make the dressing: In a small bowl, whisk all ingredients for the dressing together. Serve this dressing immediately, or for best flavor chill for 2 hours before serving.3. Cut Iceberg lettuce into small wedges, and arrange on a platter, alternating with the bacon. Drizzle generously with dressing, and sprinkle crumbles of blue cheese. Serves 6-8.
