A spin on Thanksgiving mashed potatoes. This healthy and vibrant side dish is made of roasted butternut squash, sweet potato, caramelized onion and garlic. A little bit of butter makes it all the better!
Butternut squash might be fall's most versatile vegetable. There are many delicious dishes you can make with this squash. From soups and salads to creamy sauces for pasta. The taste is sweet and nutty, similar to that of a pumpkin. It has a good source of fiber, vitamin C, magnesium, potassium, and a rich source of vitamin A and B6.

ROASTED BUTTERNUT SQUASH MASH
Ingredients
- 1 butternut squash
- 1 teaspoon salt - or more to taste (about 1 ½ teaspoons if sweet potato is added)
- ¼ teaspoon pepper - or more to taste
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground onion powder
- ¼ teaspoon ground garlic powder
- ½ cup milk
- 3 teaspoon butter
- 1 sweet potato (yam) - optional
Grilled onion topping:
- 1 yellow onion - sliced
- 1 glove garlic -optional
- cilantro for garnish -optional
Instructions
- Preheat oven to 350 °F1. Cut butternut squasch lenghtwise through the middle. Drizzle a little olive oil and season with a little salt and pepper. Place cut-side down on a baking sheet and bake ca. 45 minutes, or until squash is soft. Remove from the oven. 2. If you would like to serve the mash with grilled onion: peel and slice 1 onion, and sautee in a skillet with a little butter (medium heat) until soft and fragrant. A little clove of garlic (minced) may be added, if you like.3. Scoop out the butternut squash and place into a medium siced pan. Puree with a potato masher until all is smooth. 4. Add all seasoning, milk and butter. Mix until all combined on medium heat. Adjust seasoning after taste. Top with grilled onion, a little butter, and a drizzle of fresh chopped cilantro, if desired. Enjoy!
