This homemade crunchy granola is bursting with yummy fall spices. Hearty oats, crunchy nuts, dates, tart apple chips and fall spices gives this granola both texture and lots of flavor. It's healthy, fast and gluten-free! All you need is a spoon, some milk or greek yoghurt.

Every time when we make granola, we're astounded how quick and easy Granola is to make, and how extremely yummy it tastes. Once you try homemade granola, you won't go back to store-bought granola. It's so much better and healthier, since it's made with whole grains, unrefined oil and naturally sweetened.
This granola tastes definitely like fall - crunchy, fruity and perfectly spiced! My kids love it!
Tip: The granola may still be slightly soft when it comes out of the oven, but keep in mind that it will become more crunchy as it cools. It is very important to let the granola cool completely on the baking sheet! If you store it in a jar right away, moisture will develop and the granola will turn soft.
Perfect for breakfast, topping, or snack. It stores nicely, and would make a great homemade gift.

AUTUMN SPICED GRANOLA
Ingredients
- 3 cups rolled oats (I use a mix of 1 cup old fashioned oats and 2 cups quick oats)
- ½ cup chopped walnuts
- ½ cup chopped pecans
- 2 tablespoon flax seeds
- ¼ cup hemp seeds (optional) - substitute with Pumpkin seeds, or leave out altogether.
- ¼ cup lightly packed brown sugar
- ⅛ teaspoon salt
- ¼ teaspoon ground nutmeg (alternatively use pumpkin spice)
- 1 teaspoon ground cinnamon
- ¼ cup coconut oil
- ¾ cup maple syrup
- 1 cup a mixture of chopped dates, apple chips, cranberries, raisins, or your favorite dried fruit! (optional)
Instructions
- Preheat oven to 325 °F1. In a large bowl add oats, chopped nuts, seeds, and spices. In a small pan heat the coconut oil. Once the coconut oil has liquified add to the oat mixture, then pour the maple syrup in. Stir everything really well together. Line a baking sheet with parchment paper, pour the oat mixture evenly onto the sheet. Bake for about 35 minutes. After 15 minutes stir granola often to prevent burned edges. Granola should be golden brown. Allow to cool completely. Break into desired pieces. Some small and bigger clusters are nice. Store in a glass jar, or air-tight container. Enjoy!
