They are so quick and easy to make. In literally 10 minutes you can indulge in these Belgium style waffles. The flour can be substituded with Spelt, or Einkorn, or even gluten-free flours. The yoghurt will cut down half of the fat content than regular waffles, and will add a nice taste to it. Freeze the rest for an easy Meal Prep.

Greek Yoghurt Waffles - Quark Waffeln
Ingredients
- 4 Eggs
- ¼ cup (4 tbsp) Sugar
- ¼ teaspoon Salt
- 1 cup (250 g) Greek Yoghurt (I love the Brand "Fage 2% ". I think it is the closed match to German Quark)
- ½ cup (120 ml) Milk
- 1 tsp Vanilla Extract
- 2 cups (200 g) Flour
- 1 teaspoon Baking powder
- ¼ cup (4 tbsp) Butter (sweet cream - melted)
Instructions
- 1. Preheat Waffle Iron (Settings: Medium brown, Belgium Waffle setting)2. Separate egg yolks from egg whites.3. Melt Butter4. In a medium sized bowl, beat egg yolks, sugar, vanilla & melted butter until creamy, then add greek yoghurt and milk. Mix until all combined.5. Combine Flour and baking powder and seave through a fine wire mesh sifter. Mix with a spatula.6. In a separate bowl beat the egg whites until stiff peaks form.7. Add egg white-foam to waffle batter and gently fold together. That will make the waffles crispy on the outside.8. With a ½ cup measurement pour batter into hot waffle iron, and bake according to manufacturer settings.Optional: Sprinkle with a little confectionars sugar. Serve hot with your favorite sides!
